Rhubarb Bread
1+1/2 cup brown sugar
2/3 cup oil
1 egg, slightly beaten
1 cup sour milk
1 tsp. vanilla
2+1/2 cup flour
1 tsp. salt
1 tsp. soda
1+1/2 cup rhubarb, finely cut
1/3 cup brown sugar
1 Tblsp. margarine
1/2 cup chopped nuts
Cream sugar and oil. Add egg, sour milk and vanilla. Stir in flour, salt, soda and then add rhubarb. Put into a greased pan (either two 9x5-inch loaf pans or for a coffeecake, bake in a 9x 11-inch pan). Combine the 1/3 cup brown sugar, margarine and nuts and sprinkle over the top. Bake at 350 degrees for 40 minutes. Test for doneness with a toothpick. Loaves freeze well too.

Simple Barbecue
1 lb. ground beef 2 Tblsp. lemon juice
1 large onion 1 - 10 oz. can Tomato Soup
1/2 cup celery, finely chopped 1 Tblsp. Worcestershire sauce
1/4 cup brown sugar 1 T. mustard (not powdered)
1/2 cup ketchup salt and pepper
2 Tblsp. vinegar
In a large pot mix beef, onion, celery, brown sugar, ketchup, vinegar, lemon juice, soup, Worcestershire sauce, and mustard together. Simmer for 1-1 1/2 hours. We serve on an open face slice of fresh bread or in buns (they are yummy-sloppy) with dill pickles, corn and salad.

Lazy Cook's Chile Rellanos
1+1/2 lbs. Monterey Jack cheese, shredded
2 cans (7 oz. each) whole or diced green chilies (your choice heat)
7 eggs, beaten
1 pint dairy sour cream
Paprika
In a greased casserole, 9X13 inches, alternate layers of chilies and cheese, beginning with chilies and ending with cheese. If whole chilies are used, slice them lengthwise. Beat sour cream into eggs until smooth. Pour over cheese mixture. Sprinkle generously with paprika. Bake, uncovered, in oven preheated to 350 degrees about one hour or until knife inserted in center comes out clean and top is puffy and golden brown. We like to eat as a main dish for dinner or brunch and serve with a vegetable and fresh bread. Or you can serve as a substitute for pasta, rice or potatoes with baked ham, poultry or other meat of your choice.
Eight to ten servings.
